Not one to do anything halfway, Edwin McKee Monroe, 90, of Bedford, Texas slipped peacefully into the next life late in the evening of February 17, 2025.
Married to the love of his life for 67 extraordinary years, “Ed” and his doting bride, Carolyn Monroe, had three children: the late Stuart Monroe, Melinda Scruggs, and Brad Monroe.Ed was born June 5, 1934 to Joseph and Mabel McKee Monroe. He grew up in Dallas, Texas where he attended school. Later, he opened and ran a successful paper packaging business that he sold at the age of 82 when he finally decided to retire.Ed and Carolyn met in 1956 at a restaurant in Dallas, sandwiched between their respective jobs. Though no one can agree on the name of said restaurant, family has always referred to it as “The Greasy Spoon.” After multiple attempts at wooing his bride-to-be, Ed asked to give Carolyn a ride home from work. She agreed, and they married less than a year later.Ed enjoyed hunting and spent as much time outdoors as he could, even though he slowed down with COPD and mobility issues in the last several years. An avid hunter, much of his collection is mounted and proudly displayed in his home, complete with a record-holding Canadian elk, white-tailed deer, bear skins, a mountain lion, and more.Ed never said “no” to a sweet treat, and especially loved McDonald’s apple pies. Although he joked that he was “allergic to chicken,” he enjoyed a regular trip to Popeye’s. Ed was fiercely protective of his family, loving, and stern but kind. He was truly someone we all want to be just a little bit like. We will miss him dearly.
Ed is survived by his wife, Carolyn, and their two children, Melinda (Darrell) Scruggs and Brad (Heidi) Monroe. In addition, he leaves behind his grandchildren, Amber (Drew) Washington, April Bell, Maggie and Stuart “Ren” Monroe, and great-grandchildren, Owen and Miles Washington. A number of extended family members, friends, and acquaintances will also miss his gentle spirit.
He was preceded in death by both parents and two siblings, Mary Jo Hull and Bill Monroe.
